Just in time for Super Bowl Sunday.Michael makes a mean steak, and what better time to have a juicy, flavorful steak than on Super Bowl Sunday. So, without further ado, here is Michael's (shhh) Secret Super Bowl Super Steak Recipe (and all the fixin's):
Any kind of steak will do, but we prefer either t-bone, ribeye, or filet mignon. The seasonings matter, of course, that's what makes it so tasty, but it's also the technique Michael uses that helps give the steak moisture and that 'melt in your mouth' outcome, so be sure and follow how he does it as well as what he uses.
Don't use frozen steak, make sure it's fresh from the fridge(never having been stored in the freezer), or fresh from the store. Remove it from the packaging and dry it with paper towels. Next add the seasonings. Liberally apply the following to the top, bottom, and sides of the steak: kosher salt, fresh ground pepper, garlic powder, and onion powder. Knead both sides of the now seasoned steak with your fingers, and then let it sit out for 30-45 minutes in order to reach room temperature. Fire up the grill and let it get searing hot on all burners. Sear both sides of the steak, then turn off one burner; move the steak so it's above the burner that is turned off. If you have three burners like we do, leave one side on high, the middle on medium to low, and turn the other side off; the steaks should go on the side that is turned off. Close the lid and let it cook. The cooking time is up to you. It will depend on how you like your steak done: well done, medium, medium rare, rare, or you can save yourself all this trouble and just eat it straight off the styrofoam. ha When the steak is done to your liking, remove from the grill on to a plate, cover with foil, and let it rest for about ten minutes. Serve with baked potato, zucchini, yellow squash, yellow and red bell peppers, and a white onion. These are done on the grill as well.
Baked Potato:
Pierce potato with a fork, place on a paper plate and put in the microwave for four minutes, then turn and cook for another four minutes. Take out of the microwave and place in foil, cover potato with olive oil and kosher salt, then wrap the foil so the potato is sealed. Place on the upper rack of the grill at the same time you place the steak on the grill, and it comes off at the same time the steak does. Right before serving, add butter, salt, pepper, and anything else you desire, such as sour cream, chives, etc.
Onion and Vegetable Grilling:
Slice a whole white onion, place it on a sheet of silver foil, put two pats of butter on it, along with some kosher salt, fresh ground pepper, garlic powder, and onion powder. Wrap the foil so the onion is sealed, place it on the hot side of the grill at the same time the steak goes on the grill. Remove at the same time as the steak.
Here is what you do for the vegetables:

Pour olive oil into a large ziploc bag, add some kosher salt, fresh ground pepper, garlic powder, and onion powder; shake the bag to mix the oil and seasonings together. Slice your vegetables into 1/4" lengthwise slices and put into the ziploc bag, shake until they're fully coated with the oil and seasonings. While the steak is 'resting', place each vegetable directly on the grill, on medium heat, grill for five minutes then turn them over and grill for another five minutes, or to your liking.

I wanted to share a pic or two with you of what the Super Steak looks like, but we ended up having pork chops for dinner last night, which is what you see in the pics. Looks pretty close to steak, don't you think? Yeah, right. ha
