Easy-Peasy Peanut Butter Cookies

I found this easy, yummy recipe on someone's blog; I had everything on hand and made them the same day. No flour is needed, which is a plus in my book. I found these cookies to have a really nice texture and are very flavorful. If you like peanut butter, be sure and try these!

Here is all you need:

1 cup chunky or smooth peanut butter
1/2 cup brown sugar
1/2 cup granulated sugar
1 egg
1 teaspoon baking soda
Sweet little helper wearing a cute apron :)

(makes about two dozen cookies)

Preheat oven to 350 degrees. Grease a baking sheet(or two) with butter and set aside. In a mixer combine peanut butter and sugars until well combined, about 2 minutes. Add egg and baking soda and mix for another 2 minutes.

Roll into walnut sized balls.

If you'd like to make them purty, you can make a simple fork pattern, or...

go crazy and make a crisscross pattern with a fork.

Then bake for approximately 10 minutes; until lightly browned.

Cool for two minutes on rack before handling...

Then eat... Yum!
