I doubt The Pioneer Woman would be impressed

I made(more like burned) her Sour Cream Pancakes today; this is a recipe in her new cookbook, The Pioneer Woman Cooks, that was released last week. I received it two days after it was released, I had it on preoder at Amazon.com; love that place. The cookbook not only has great recipes, but it's visually pleasing as well. She included many of the pics she has on her blog of her kids, Marlboro Man(her husband), and their ranch, in the cookbook, so it's really two books in one.

'The Pioneer Woman Blog' fans, and live in the Phoenix area, Ree Drummond(The Pioneer Woman), will be in Tempe this evening at the Changing Hands Bookstore at 7:00 pm signing her new cookbooks; she's on a cookbook signing tour right now. I won't be there, I'm not much on celebrity, and not much for standing in line for more time than it takes to stand in line to go to the bathroom at halftime at a Suns game, which is something that is a must, whereas getting a book signed is not. But I must admit that it would be nice to chat with her, she has a zany sense of humor, which I appreciate; I'm sure she would find humor in my having burned her Edna Mae Sour Cream Pancakes.

Here is the 'Edna Mae's Sour Cream Pancakes' recipe; this is on Pages 76 & 77 of her cookbook. I hope you do a better job of making them than I did... If I can't do it, anybody can... Gotta love my play on words... or not.

**Nothing was hurt in the making of these pancakes, except my pride.

Ingredients:

1 Cup Sour Cream

7 Tablespoons All Purpose Flour

1 Tablespoon Sugar

1 Teaspoon Baking Soda

1/2 Teaspoon Salt

2 Large Eggs

1/2 Teaspoon Vanilla Extract

1 Tablespoon Butter for bottom of skillet



Place a cast-iron skillet or griddle over med-low heat; you want it to get nice and hot. Place sour cream in a medium sized bowl, then place flour, sugar, baking soda, and salt in with the sour cream. Stir together very gently, stop short of mixture being totally combined. You want the pancakes to have some interesting texture.

Whisk the eggs in a separate bowl. Add the vanilla and stir to combine. Pour the egg mixture into the sour cream/flour mixture. Stir together gently. Don't worry about the mixture being totally combined, a little white and yellow swirling is fine.

It's great having a little helper.



Do you see any white or yellow swirls in there? Nope... That's because I don't know how to stir gently; I hope to learn how to do a lot of things when I grow up.



Melt about a tablespoon of butter in the skillet. Pour the batter into the skillet 1/4 cup at a time. Cook for 1 to 1-1/2 minutes, then flip the pancakes over. Cook for another 45 seconds and remove to a plate. Repeat with the remaining batter.



It says in the cookbook to stack the pancakes as high on a plate as your appetite dictates; I chose to stack 'em all right, so I could try and hide the badly burned ones. I then leaned one pancake against the stack of pancakes to help in hiding the... well, you know... badly burned ones. My reason for stacking them is different than hers. We're different in some ways, one being, she doesn't burn things, I do.



Top with plenty of butter and TONS of maple or pancake syrup. You need tons of the stuff for mine... I think you know why.



The inside of the pancakes look more moist than the average pancake, this must be the sour cream effect.



Even though I burned the pancakes, Caitie gives 'em a 'thumbs up' sign. She's either lacking in the taste department, or she's a loyal mama's fan. Thanks, Honeypoops. :)
