The Hawk-Muffin

Want a quick and easy breakfast? Try the Hawk-Muffin. Fire up the ol' grill, throw a cast-iron skillet on it and cook an egg over-easy style. While the egg is cookin' on the grill, throw an english muffin into the toaster, butter one side, put mayo on the other. When the egg is done put it on the buttered side of the muffin. Throw a slice of American cheese into the microwave for a few seconds, on half-power, not on full-power, just until it's melted slightly, add this to the mayo side, then put the two sides together, and voilĂ ... breakfast. The reason I put the cheese in the microwave is because I like mine warm and melted when placed on the egg, the egg and english muffin aren't hot enough for the cheese to melt on its own. You can skip this part if you like.

Ingredients:



Cooking on one side, about ready to turn them over for a few seconds on the other side. The eggs are done over-easy. Just so you know, I added butter to the bottom of the cast-iron skillet before adding the eggs.



I don't let Caitie eat anything that's undercooked, so I made her a scrambled egg.



Mayo on one half of the english muffin, and butter on the other half.



Place the cheese on the mayo side, and place the over-easy egg on the buttered side. I sprinkle a little salt and pepper on the egg.



Bring the two sides together, and you have breakfast. You can make one...



or make a few.



As you can see, Caitie went for the english muffin with grape jelly. This girl is so easy to please. :)
